Prophet's Rock White Vermouth is a Central Otago vermouth made in conjunction with Scapegrace Distillery from Prophet's Rock Pinot Gris, aged in French oak and flavoured with foraged local botanicals. White gold in colour with very pale lime green tinge, it unfolds with a complex aromatic profile that includes an array of florals, citrus, Provençal herbs, and a range of spices from star anise to clove. Serve it over ice, with tonic or in a Martini.

It's a collaboration between Scapegrace Distillery and the Prophet's Rock winemakers. The botanicals are foraged in Central Otago, some of them within a few hundred metres of the vineyard, and turned into tinctures using neutral Scapegrace spirit.
What it tastes like
This vermouth is beautifully bright, dry and herbal. The palate leads with citrus along with an underlay of spices, and ripe pears coming from the Pinot Gris. The palate is focussed with freshness, energy, warmth, and richness of flavour, all underpinned by a subtle briny salinity. Very complex and textured, this Vermouth evolves and unfolds in the glass.
