This is a vermouth made from Pinot Noir grown at Prophet's Rock. Vermouth is wine that has been fortified (strengthened with added spirit) and flavoured with botanicals such as herbs and flowers, and wormwood gives it a bitter edge.
Vibrant ruby red in colour with a pale rose rim, complex and layered aromatics include a range of spices from cinnamon and nutmeg to five-spice, dried herbs, deep cherry, violets and rose. The style is rich, spiced and generous, with poached cherry and mulled spice on the nose. It's a good choice for anyone who likes a Negroni, or who wants a red aperitif to sip over ice.
It's a collaboration between Scapegrace Distillery and the Prophet's Rock winemakers. The botanicals are foraged in Central Otago and made into tinctures using neutral Scapegrace spirit.
What it tastes like
This vermouth is warm, structured, and rich palate shows cherries, rosehip, orange zest, and liquorice nestled amongst many other spices and woody notes. The body and richness are wonderfully balanced by the structure of the Pinot Noir and the woody tinctures, notably a hint of the endemic Horopito and the mandatory wormwood on the finish.
