THE WINERY

When we opened The Winery in central Queenstown in May 2005 we were one of the world's first and largest wine tasting experiences. With a focus on bringing the best of New Zealand wine to one location, The Winery's reputation grew and in 2019 we were recognised by TripAdvisor in the World's Top 10 wine experiences People's Choice Awards.

In February 2020 The Winery opened a second store in Arrowtown, taking the experience to the next level with more whisky and gin tastings, our famous cheeseboards with a new tapas menu and a decor designed for the relaxation and comfort of our customers. Domaine William Fèvre Chablis Premier Cru Vaulorent 2024 is 100% Chardonnay from a vineyard beside the Grand Cru Les Preuses, and Decanter picked it as the Top Chablis 1er Cru in its 2024 Chablis report. It is rich and mineral, with lemon peel, nectarine and oyster shell, and a great match for oysters and seafood.

In the glass it shows a pale yellow with green reflections. The aromas on the nose are iodine, white peach and pear skin, with a touch of orange blossom.

It is a special weekend wine for anyone who likes white Burgundy with real tension.

The 2024 harvest in Chablis was tiny, with most producers losing 60 to 90% of a normal crop, according to Charles Curtis MW.

What it tastes like

The wine has a dense, concentrated palate with a crystalline texture, carried by vibrant acidity. The finish is long, mineral and salty. A gorgeous complex wine.

Who makes it

William Fèvre founded the Domaine in 1959 with 7 hectares in Chablis. The estate now farms around 70 hectares, including 15.9 hectares of Premier Cru.

Vaulorent sits on the same hillside as the Grand Cru Les Preuses, with only a small path between them. The soils are Kimmeridgian marl, clay and limestone, rich in marine fossils.

For the 2024 vintage, the grapes were hand-harvested into small crates and whole-bunch pressed. The wine was fermented with indigenous yeasts, 30 to 50% of it in used French oak barrels and the rest in stainless steel. It then spent 10 to 15 months on fine lees (the spent yeast cells that add texture).

About the vintage

Charles Curtis MW writes in Decanter that rain from October 2023 ran 50% above normal. Frost in mid-April was followed by a hailstorm on 1 May, with more hail on 29 June and 31 July. The best wines are vibrant, acid and mineral driven.

Jasper Morris noted the wines are less fragile than the 2021's, whilst James Suckling reported that many of William Fèvre's Grand Cru plots gave only 5 to 6 hectolitres per hectare.
