THE WINERY

When we opened The Winery in central Queenstown in May 2005 we were one of the world's first and largest wine tasting experiences. With a focus on bringing the best of New Zealand wine to one location, The Winery's reputation grew and in 2019 we were recognised by TripAdvisor in the World's Top 10 wine experiences People's Choice Awards.

In February 2020 The Winery opened a second store in Arrowtown, taking the experience to the next level with more whisky and gin tastings, our famous cheeseboards with a new tapas menu and a decor designed for the relaxation and comfort of our customers. Domaine William Fèvre Chablis Premier Cru Vaillons 2024 is 100% Chardonnay from a south-east-facing Premier Cru site in Chablis, made by an estate that farms around 70 hectares there. It is layered and mineral, with white pepper and lemon zest, and a great match for oysters.

In the glass expect aromas of quinine (the bitter edge in tonic water) and floral wisps, with a cool, airy feel.

It is a special weekend wine for anyone who likes Chablis with freshness and precision.

The 2024 harvest in Chablis was tiny, with most producers losing 60 to 90% of a normal crop, according to Charles Curtis MW.

What it tastes like

The wine has a mineral-driven palate with excellent balance, and a finish tinged with citrus. It is delicious.

Who makes it

William Fèvre founded the Domaine in 1959 with 7 hectares in Chablis. The estate now farms around 70 hectares, including 15.9 hectares of Premier Cru.

In Vaillons, Fèvre farms 3.65 hectares across 12 plots, on southeast-facing slopes. The sites include Vaillons, Châtains, Mélinots and Roncières. The soils are hard, compact limestone over a Kimmeridgian subsoil.

About the vintage

Charles Curtis MW writes in Decanter that rain from October 2023 ran 50% above normal. Frost in mid-April was followed by a hailstorm on 1 May, with more hail on 29 June and 31 July. He rates the vintage 3.5 out of 5, and says the best wines are vibrant, acid- and mineral-driven.

Jasper Morris records 634 mm of rain in Chablis between April and September, and finds the wines less fragile than the 2021s.

James Suckling reports that many of William Fèvre's Grand Cru plots gave only 5 to 6 hectolitres per hectare.
